Evaporated Milk Substitute

Evaporated Milk is fresh milk from which around 60% of the water content has been removed.  It is often called for in recipes to add richness or for a creamy texture since it is a concentrated form of milk.

This Evaporated Milk substitute can come in very handy whenever you are out of the canned version.  I’ve been using this in most of my recipes and it works perfectly well!  🙂  Why pay for those little cans when you can make it so easily within few minutes; unless they are available at a very cheap price.


  • 2/3 cup dry milk powder
  • 3/4 cup water


  • Mix the water and dry milk powder to form a uniform mixture.  Then use in place of evaporated milk in any recipe.
  • This will yield 1 cup of Evaporated Milk.

I use dry milk most of the time, but if it is not available, you may as well simmer fresh milk on stove top till it’s reduced to half in volume.  This method will be much more time consuming though.

  3. I noticed a lot of people using powered milk when we were living in Mauritius and they all thought it very odd that I was looking for fresh milk all of the time.
